The Big Apple Dream

by Nikhil Bendre, March 30, 2018

The city that never sleeps, the Empire city, the city so nice they named it twice, THE BIG APPLE! I had heard a lot about all these names given to New York, but always wondered what was so special about it. I found out last year when I first set foot into this concrete jungle laden with flamboyance and culture, food and music, people from all around the world. In my mere three days in the city walking around, taking the subway, eating at some chic and modern restaurants, I fell in love with the five Boroughs.

After graduation, I aspire to move to Brooklyn and embark on a culinary journey in this magnificent city. The restaurant Olmsted in Prospect Heights is where I would like to work for my OPT (Optional Practical Training) and I am thankful to the Kendall College Trust for allowing me the resources to make this big move and sustain in a city as cutthroat as New York. This restaurant in the heart of Brooklyn has been deemed one of the best new restaurants in the US. Headed by Chef Greg Baxtrom, they are giving food a modern yet highly approachable feel. I believe that working there will give a strong set of skills and a network that will help me throughout my career. During my stay in New York, I will use my free time to stage at some of the best restaurants in the world and obviously gorge on some of New York’s original delicacies!
