Natalie Sorensen Summer 2020 Blog

“We are all faced with a series of great opportunities brilliantly disguised as impossible situations.” This quote has captured the essence of this past quarter. Before the pandemic had struck, I had opened a small catering business. However, due to covid-19 I knew my business would have to be on hold temporarily. I did not know when I was going to be able to start out again, or how that would even be a possibility. I decided to wait, and trust that only good would come out of my patience. I remember cooking for my close friends and family and truly missing putting on beautiful events for people.

I was sitting by the lake in July when I had gotten an email from a previous client saying that she had given my number to one of her friends. I got a message asking for a private event in August with contact information attached. I responded immediately and looked at my sister with bright eyes. “It’s happening Sofia!” I trusted that everything would work. I knew it would.

So, the next morning I picked up the phone to give them a call. They wanted me to come to their home to cook for them privately. I asked about their safety precautions during this time, menu ideas, and price point. From there I was able to start creating a beautiful event for them. I had called my trusted partner and sous to see if she was available to help with this event. She immediately said “yes!”

I prepared for a week solid to ensure that everything was absolutely gorgeous. We prepared 6 different canapes, 2 main dishes, and three desserts. There was also truffle and tea service. We had raving reviews from the guests and my clients. We were invited to do 2 more events for them. After this point, I started getting calls from the guests who had attended asking for different services.

I am now preparing for my next event this coming week. I have been creating a birthday party dinner for my client’s daughter. I cannot wait to continue growing my personal business. I am thankful for all the opportunities that have led me to this point. I look forward to my future.
