Fifth block culinary students get the opportunity to choose between a 10-day catering or banquets class. I chose the banquets class instructed by Chef Thomas Masse. Each week, we would split into groups and serve a 5-course menu inspired by a large city around the world.
Some of my favorite countries we focused on included China, Argentina, and Mexico. Chef Masse did a wonderful job of exposing my classmates and I to different cultures’ techniques and flavors.
One of my biggest goals is to travel to gain a better understanding of food and culture in other countries. I am grateful that this class inspired me even more to achieve this goal!
