I have thoroughly enjoyed this quarter, and have had so many enriching experiences. This is my last quarter of classes in my Baking and Pastry Arts program. This quarter’s classes (Production and The Dining Room classes) are all about giving us more independence in the kitchen. I was able to experiment with flavors in my own way, and define my own baking style. I love cake decorating, but it was so much fun learning how to operate and come up with desserts in a restaurant setting.

Another experience that has been invaluable to me this quarter is being a part of a cake competition. Barry Callebaut (the chocolate company we use at Kendall) put out a new line a fondant, and had an opening party for the new line of fondant including a small cake competition for students. I joined in on the competition and was able to make a three tiered wedding cake. I was able to win second place! The event itself was amazing too. There were demos of cake decorating from famous chefs. After the demos, they had a small party where I was able to mingle with local cake decorators and these famous chefs.

This quarter and these experiences have been invaluable to me. I feel that I have been able to grow so much in this quarter in my career. I can’t wait to see what the future holds for me.
