Summer quarter has ended and block 4 exams are completed, this quarter has been a busy one. I took the bulk of my classes this quarter; fish and sauce, meat and sauce, garde manger, banquets, professional development, modern cuisine, and advanced skills. These past ten weeks were extremely busy and went by faster than a blink of an eye.

I was slightly nervous for a few of my classes during this quarter, fish and sauce in particular. I was nervous for this class because I knew fish fabrication was a weakness of mine, and I didn’t know what to expect in regards to the skill level of the class. I was pleasantly surprised at the end of the class session. Fish fabrication is not an easy thing, and it can be very daunting. However, with the proper education and a little bit of practice it is no longer so intimidating. I can honestly say, I feel much more confident in my abilities to fabricate and properly cook fish.

This quarter was the “make it or break it” test for me, and I am ecstatic to have this proud feeling of accomplishment. I am looking forward to the fall quarter, as I will be taking fine dining. Another class of mine that I am looking forward to gaining more skills in. After fall quarter, I have an internship lined up at a food science company called CSSI. I am thrilled to start my internship in Research and Development and begin my career. Without the support from KCT, I would not be standing where I am today. Thank you!
