In April, I started my capstone project that will take me through this quarter as well. I decided to do the sustainability industry challenge with some other students who are also working towards a concentration in sustainability. We’re working with McCormick Place to develop a new concept for their Pop-Up Restaurant Experience (PURE). These are pop-up restaurants that are used at every convention they hold. We’re creating a sustainable pop-up that has a grow wall for some of the garnishes. These will be picked in front of the attendees to add to the experience. Our name will be LOHAS, which stands for lifestyles of health and sustainability. This scholarship has helped me to focus on this project and I’m excited to see how it all comes together this quarter.
