My time at Kendall is coming to a bittersweet end. I think I’m actually going to miss school! I’ll miss my friends and the teachers who have invested so much in my future. My emotions are everywhere… I am full of excitement, stress, anxiety and hope. I am very eager to take the knowledge and skills that Kendall has taught me and apply them to the work world starting with my internship. This quarter has been a wild ride, full of long days and even longer evenings. My favorite classes this quarter have been the fine dining classes, both front and back of house. Taking both of these classes has taught me valuable skills such as how to push myself beyond my comfort zone, working with others to create something beautiful, working quickly, and better time management.

In January 2019, I will be moving to Texas to work with a company called LSG Sky Chefs, which is the second largest provider of airline catering and in-flight services worldwide. I will be working with their menu design team, and creating first class and international dishes for the next season of flights worldwide. I have also been told that I will also be on duty during the American Airlines VIP Superbowl Gala! I am eager to put all of the knowledge and skills that I have learned at Kendall so far and take my culinary journey to the next level. I am grateful for the lessons learned and all of the wonderful friendships that I have formed along the way. Thanks, Kendall!
