I started in the restaurant industry because I wanted a career change, or at least a new experience. Last year I got a job at a butcher shop/coffee shop/restaurant in Washington, DC, having no prior experience in doing any of these things and, frankly, I’m surprised I ever got the job. It was only by a stroke of luck that the HR director was from my area in Pennsylvania. That little bit of faith opened a whole new world to me, and was one of the biggest learning experiences of my life.

Fast forward to earlier this summer. I was in the middle of my 60+ hour weeks at school/work and I was unable to make my student loan payments. Just like the restaurant in DC saw my potential, The Kendall College Trust saw my passion and dedication to the craft and gave me the opportunity to finish my studies. In just one year at Kendall, I’ve gone from barely being able to fry an egg to working the line in the Dining Room at Kendall College working six or more orders at once. I’ve gone from merely making reservations to eat at some of the best restaurants in the city of Chicago to having conversations with chefs about working at them. Thanks to KCT, my dreams, and many other future chefs’ dreams, are able to be further pursued.
