I am a hospitality student and my concentration is Hotel and Lodging and since a young age I was interested in this field. I always thought that working in hotels is what I wanted to do, however this quarter I opened my mind to Food and Beverage, this industry inspired me so much, especially in the city like Chicago where there are variety cuisines, concepts and levels of service. Moreover, my friends and me went to the National Restaurants Association and I was amazed by the scope of this event and the number of organizations participating.
Also I took a F&B class, where I have learned different aspects of the start-up steps, operations, types of menus, personnel and how it is all connected, as a chef Rocco Dispirito said:
“It’s a very, very difficult space to operate in, the restaurant business-it requires a lot of human beings to intersect at just the right place to make it all work out.”
I was thinking that it is a really difficult industry, however now I ask myself “So what?” If it makes me happy and I enjoy it, I can overcome any challenges and just do it. Opening a restaurant is my new goal that I want to achieve after graduation.
